The rough interior grips. It’s one of the oldest and most intelligently designed pasta shapes in the southern Italian canon, and it translates directly into the professional kitchen.


What Is Orecchiette?

Orecchiette little ears are the signature pasta of Puglia, made by pressing a small disc of dough against a surface and dragging it to create a cup shape. The result is a thick rim with a slightly domed, smooth interior and a rough exterior from the drag. In Bari, you can still watch nonnas making them by hand on the street.

The shape is specific for a reason. The dome catches braised greens and thick sauces inside the cup. The rough exterior holds oil-based and lighter sauces. The thick rim gives each piece a chew that diners notice it’s a pasta you eat slowly and enjoy, not one that disappears into a bowl.

Classic Pairings and Modern Variations

Orecchiette’s most iconic pairing is with cime di rapa broccoli rabe with anchovy, chilli, and breadcrumbs. It’s one of the most satisfying pasta dishes in existence: bitter greens against the chew of the pasta, lifted by heat and umami. In Queensland, where cime di rapa can be harder to source, broccoli or cavolo nero work equally well.

Beyond that:
