VEDE began inside Factory 51, a Brisbane restaurant where pasta was never an afterthought. The pasta we made for our own tables kept getting better — new shapes, a longer ferment, a stretching machine built from scratch — until local chefs started asking where they could buy it. That demand is what turned VEDE from a restaurant’s house pasta into a wholesale product. It’s still made here, by a chef and a restaurateur who know what a Brisbane service actually demands.

Fermented, not rushed. Stretched, not forced.
Most fresh pasta skips fermentation and is pushed through a die. VEDE’s long shapes start with a wild sourdough culture, slow-fermented before the dough is ever formed — which gives them a gentle tang, more flavour and a bite that holds through service. The short shapes are stretched against a board by a custom machine inspired by the Puglian hand method, so they keep the character of hand-made pasta at the volume a commercial kitchen needs. It’s a way of making pasta that’s exceptionally rare, not just in Brisbane but globally at this scale.

VEDE is designed to drop straight into service. The IQF shapes go from freezer to boiling water without thawing — long shapes need only a couple of minutes, the stretched short shapes a little longer — so you can fire pasta to order without holding cooked stock. Because the sourdough long shapes hold their structure, they sit on the pass without turning soft, and the rough bronze-extruded surface means sauce clings instead of sliding off. Pair the pappardelle with a slow ragù, the orecchiette with broccolini and chilli, the squid ink linguine with seafood — they’re built to carry a sauce, not just sit under it.
