VEDE was built around two obsessions: fermentation and technique. Long shapes are made from slow-fermented sourdough dough — a process used by almost no one else in the world at commercial scale. Short shapes are stretched, not extruded — using the same hand-method that home cooks in Puglia have used for generations, now engineered for the demands of a professional kitchen.

What makes VEDE different

The only sourdough pasta in Australia.

Most pasta manufacturers — fresh or dried — skip fermentation entirely. VEDE doesn’t. Every long shape in our range is made from dough that has been wild-fermented using a sourdough culture, giving the pasta a depth of flavour, a slight tang, and a structural resilience that straight semolina pasta simply cannot replicate.

The result is pasta that holds its texture under the heat of service, carries sauce differently, and tastes like something your diners haven’t had before — because in Australia, they genuinely haven’t.

In the old towns of Puglia — Bari, Lecce, Brindisi — pasta is not extruded. It is stretched. Each piece of dough is worked by hand into shapes that have a silky interior, a textured exterior, and an architecture that holds sauce in ways a die-cut shape never could.

The craft

Pasta made the way Puglia actually makes it.

Most people know orecchiette. Few know how it’s supposed to be made.

In Puglia, pasta is not pushed through a die. It is stretched — a small piece of dough worked against a board with a knife or a thumb, pulled into its shape by hand. The result is a pasta with a smooth, almost silky centre and a roughened, sauce-gripping exterior. It has a bite that extruded pasta, even good extruded pasta, cannot replicate.

VEDE built a custom machine inspired by this hand-stretching method. Not to replace the craft — but to bring it to the volume a professional kitchen needs. Every orecchiette, every cavatelli, every strascinate is shaped this way. Stretched. Not forced.

Combined with our sourdough fermentation process for long shapes, VEDE represents a style of pasta making that is exceptionally rare — not just in Australia, but globally at commercial scale.

Where VEDE comes from

Born in a restaurant kitchen.
Built for yours.

VEDE began inside Factory 51 — a Brisbane restaurant where the kitchen has always taken pasta seriously. What started as the pasta we made for our own tables became a product we couldn’t stop refining: new shapes, better fermentation, a stretching machine built from scratch.

We’re a chef and a restaurateur who decided that if Australia’s kitchens deserved better pasta, we’d better make it ourselves.
