What Are Biang Biang Noodles?
Biang biang mian (biángbiáng miàn) comes from Shaanxi province in China’s north-west, where noodle makers slap and stretch each piece of dough into a single wide ribbon — the “biang” is the sound of dough hitting the bench. The noodle is famous for two things: a width that can reach several centimetres, and a chew that no extruded or rolled noodle can match. The character used to write “biang” is one of the most complex in the Chinese language — 58 strokes — and the noodle is just as extravagant.
Traditionally served la-zi style: showered with chilli flakes, garlic and spring onion, then hit with smoking-hot oil at the table. They also carry braises, cumin lamb, and tomato-egg sauces exceptionally well.
