👨‍🍳 From Restaurateur to Revolution

Vede Pasta was founded by Beau Vedelago, an Italian restaurateur and pasta maker (pastai), and the owner of Factory51 — one of Brisbane’s leading Italian dining venues.

After years of perfecting pasta in his own restaurant kitchen — rolling dough, testing fermentation, chasing flavour and structure — Beau realised there was nothing like it available to the broader foodservice market.

Most commercial pasta was designed for mass production, not real-world results. It lacked character. It clumped. It didn’t hold up under pressure.

So Beau changed the game. Vede Pasta was born: a fermented, IQF-frozen pasta built for chefs who value honest ingredients and artisan techniques. His goal? To make the best fresh sourdough pasta in Brisbane.
