VEDE began with one clear goal: to create pasta that performs in real kitchens. A chef and a restaurateur joined forces to design pasta that works under pressure. Because of this, every cut is made from 100% semolina, with a unique sourdough fermentation step for long shapes and stretched techniques for short cuts.
As a result, the pasta cooks quickly, holds its structure, and delivers consistency plate after plate. Therefore, chefs gain the confidence to serve it in any setting — from fast-paced lunch service to high-volume banquets.

Our pasta contains only Australian durum semolina and filtered water. There are no preservatives, fillers, or shortcuts. Instead, the clean flavour of semolina shines through.
To preserve that quality, we use IQF (Individually Quick Frozen) technology. Each portion is frozen within minutes of shaping. Consequently, hydration and texture remain intact, and pasta never clumps in storage. Moreover, kitchens gain up to 18 months of shelf life, stronger yield, and better portion control.

Our spaghetti, linguine, squid ink linguine, mafaldine, pappardelle, and fettuccine are all bronze-extruded for a rough texture and excellent sauce grip. Because of the sourdough fermentation, these cuts also deliver added flavour and resilience in service.
Stretched Southern Italian Shapes
VEDE also offers orecchiette, cavatelli, fogliette de ulivo, strascinate nero, and strozzaprete. These rustic cuts are stretched, not extruded, to achieve a silky interior and sauce-catching exterior. Consequently, they bring regional authenticity to every dish.
